this claim found on all cans describes perfectly what the new roaster from Paris does: extraordinary greens and lots from famous producers like Nestor Lasso or Elias & Shady Bayter
the design is definitely misleading as there is no banana in the the taste :D
Anyway, you will for sure have a lot of fun with this funky fermentation by the greats Elias and Shady Bayter. The anaerobic fermentation of whole cherries makes this Red and Yellow Caturra very funky. The nose will be filled with strawberries and other red fruits while the juicy texture will remind you of milk chocolate, guava, berries and hazelnuts.

After harvesting, the cherries are placed in tanks where they ferment without exposure to air, allowing unique flavors to develop.
