Here we have a extraordinary Gesha produced by Mauricio Duque in the Tolima region of Colombia. Mauricio combined a washed and a anaerobic fermentation which created a complex and floral cup profile. You will find violets and magnolia as florals combined with juicy blueberries and boozy cherries.

Anaerobic Washed
The Anaerobic Washed process for coffee starts with fermenting coffee cherries in an oxygen-free environment, similar to the Anaerobic Natural process. However, after this anaerobic fermentation, the cherries are pulped to remove the fruit and mucilage, and the beans are thoroughly washed to clean off any remaining residue. The beans are then dried. This process results in a clean, crisp coffee with complex flavors and bright acidity.
