Process
Meticulously crafted to perfection, the SL28 beans undergo a 48-hour anoxic fermentation process. Starting with the hand-selection of the ripest cherries, the process includes floating to remove imperfections, depulping without water, and careful dry fermentation. The beans are then washed and slowly dried over 24 days before resting for stabilization. This dedication to detail results in a complex and beautifully clean flavor profile.

Finca Betania is part of the Cafe Origen Palestina Association, a collective of coffee-producing families in Huila, founded in 2015. Their mission is to produce high-quality specialty coffees using traditional, chemical-free farming practices. The farm, owned by Linarco and Maria Eugenio Rodriguez, has earned accolades in Cup of Excellence events, showcasing their passion and expertise. In addition to SL28, the farm is home to prized varietals such as Pink Bourbon, Geisha, and Tabi, all cultivated with meticulous care to highlight the rich terroir of Huila.
