Rodrigo Sanchez delivers us this outstanding cold fermentation washed Gesha from Finca Monteblanco in Huila, Colombia.
Rodrigo developed his cold fermentation in 2015 after tons of experiments. While only picking ripe cherries with more than 28 brix and depulping the coffee is immediately stored in pro grain backs. The first fermentation step happens in a cold room of 10 - 13 degrees celsius for 76 hours. Fully washed afterwards the coffee then dries on raised beds for antother 23 days.
All this results in a super complex cup reminiscent of jasmine flowers, white tea, raspberry and cantaloupe
