Washed Process
also known as the wet process, involves removing the outer pulp of the coffee cherries before fermentation. The coffee cherries are first pulped to remove the outer skin, and then the beans are placed in water to ferment for 12-48 hours. This fermentation breaks down the remaining mucilage on the beans. After fermentation, the beans are washed to remove any residue and then dried in the sun or mechanical dryers. This process results in a clean, bright flavor profile, often highlighting the acidity and natural characteristics of the coffee beans.
